Holy freaking cow. I made this yesterday, and I almost died it was so good. Nut butters have become astronomically expensive. It’s really ridiculous. Even a big tub of almond butter from Costco or my favorite Azure is still almost $20. And that’s not even organic! Jeesh! One of my favorite things is to talk with my friends at the Farmer’s Markets around here and do big orders with them. It doesn’t make it cheap by any means, but it DOES make it somewhat affordable. But affordable and California don’t really go head in hand, do they?
Anyways, I’ve been working hard to make my own nut butters. There is a stand at the market that I’ve fallen in love with that makes walnut butter. She has four kinds; sea salt, honey and sea salt, chocolate, and maple. They’re ridiculously good, and I wanted to try and figure out how to make them myself. Yesterday I found a 2-pound bag of ORGANIC walnuts at Costco for $18.99. Score. So I grabbed them and did my little experiment yesterday afternoon. And thank goodness I did! I don’t know what my life would be like without this walnut butter! I’m sure it would have been very sad.
So here’s the recipe! I will say that I use a Vitamix Dry Mix Container for this. It literally takes me two minutes to make it, which is such a big win when you have three crazy kids! You *can*make this is a food processor, but it will take approximately 15-20 minutes. You would just need to let the walnuts process with the S blade until they start to release their oils and turn into butter. With my Vitamix Dry Container, it only takes a couple of minutes.
So here’s the recipe! Hope you enjoy it as much as I did!
Honey Walnut Butter
Ingredients
- 3 1/2 Cups Raw Organic Walnuts
- 2-4 Tablespoons Coconut Oil (melted)
- 2 Tablespoons Raw Honey
- 1/2 Teaspoon Sea Salt (I like the coarse sea salt for this recipe)
Instructions
- 1. Put the walnuts in the blender along with the sea salt.
- 2. Slowly turn up the speed until it’s on high and use the plunger to press the nuts into the bottom.
- 3. Within a few minutes, you should begin to see the nuts turn into butter on the bottom. Continue to plunge until all the walnuts have released their oils. It should take about a minute.
- 4. Slowly add the coconut oil and honey just until it becomes smooth. You may need to continue to use the plunger for a few seconds until it runs together on its own.
- 5. That’s it! Store in a glass Tupperware or mason jar.
- 6. Enjoy!!
Notes
- **Should you choose to use a food processor, you would use the same method. Process until the nuts release their oils and then slowly add in the coconut oil and honey until smooth and incorporated. This can take 15-20 minutes, and you’ll need to stop the food processor every few minutes to wipe down the sides.
- **The amount of coconut oil and honey will also vary according to the consistency and sweetness that you would like.
