
Who is ready for warmer weather? Just me? This is such a funny time of year when I believe our bodies start craving warmer foods but the weather is confused! Or maybe you are in part of the country where the weather has allowed you to start wearing sweaters and jeans….I am definitely craving that right now. 😉 Well, I have the perfect Fall dish, it’s my Instant Pot: Maple Bourbon Chili and it’s a winner with my kids, family and friends.

There is nothing better than only having to clean ONE thing. You feel me tired mama? The Instant Pot scared me for a while. I’m still not sure why. I was sure it was going to blow up my kitchen, but once I started using it and realized how safe it is, I’ve never gone back. For the life of me, I could never remember to put things in a slow cooker in the morning. I still can’t figure out what mom can. Like it’s hard enough to find everyone’s shoes and barely make it out of my pajamas and try to get lunches made. And who am I kidding? I drop off my kids in pajamas at least half of the time!
Whelp, now that you know how fun our mornings are…let’s talk Maple Bourbon CHILI!
I made this for my children’s hoedown at school, and the reviews were over the top great! I have found that as much as love a good steak, we have had to limit it. BUT bison has tended to be pretty good on our tummies, and I also love that it’s not as hard to find good quality bison as it is good grass fed beef.
This is a wonderful dish to take to a friend’s house or to have company over.
We love how a little bit goes a long way. The hint of sweet in the chili is a fun twist, and even my tomato fighting 9 year old loves this one! It’s the only chili she will eat! Great to throw everything in in the afternoon as well for a ready made dinner with a busy evening. Hope you love it as much as we do!
Ingredients: for Maple Bourbon Chili
- 2 pounds ground bison meat
- 1 teaspoon olive oil
- 1 ½ medium red onion – chopped
- 1 red pepper – chopped
- 4 cloves minced garlic
- 2 cups (more than one box or can) organic black beans
- 1 ½ cups plain tomato sauce (we use Rao’s)
- ¼ cup bourbon
- 3 tablespoons maple syrup
- 1 cup chicken broth (less if you like it very hearty and thick)
- 2 teaspoons cumin
- 1 ½ teaspoons sea salt
- Garnish with toppings of your choice! We love green onions and avocados and sometimes some raw cheese!
Optional: 1 teaspoon chipotle chili powder ½ teaspoon ground black pepper Turn the Instant Pot to the saute function and let it heat up Chop the onions and peppers and throw them in with the olive oil until browned then add in the garlic until fragrant Add the ground bison and cook until just browned Add in the rest of the ingredients and stir until combined Close the instant pot and use the chili/beef function.
