OK! For day 3, we’re gonna get rolling with a fun BBQ style theme! This is probably one of my kids’ favorite lunches, and it’s for good reason! It’s delicious, has some great fats, and is going to keep them full, energetic, and focused throughout their day! One of my very favorite things to munch on is something CRUNCHY! That’s why I was so excited to finally perfect my CRUNCHY homemade graham crackers! I’ve made Paleo friendly graham crackers that are soft and chewy for way too long. And if you want a good crunch, you can check out mine HERE.
So a good CRUNCHY and gut-friendly chip makes my kiddos incredibly happy! These Honest Potato Chips made with heirloom purple potatoes will rock your world. They are made with coconut oil, sea salt, and potatoes. THAT. IS. IT. De-freaking-licious, friends! I love that my kids are getting a good, gut-friendly, brain supporting oil while enjoying a treat. We use the Fork in the Road hot dogs, and I warm them up that morning or the night before in our little toaster. No microwave in our house. The veggies tray is full as usual, but I’ve added a gut building guacamole for them to dip their veggies in. The recipe is below! I sneak in sauerkraut and fermented gut building foods absolutely anytime I can. This meal can be a tad high in the sodium department, so I love to give that gut healthy boost at the same time. And yes, that’s ketchup. With sugar. Bummer, but I have yet to perfect a recipe without sugar, and if I’m being “kandid”, I’m pretty sure I’m never going to make the time to make my own ketchup. Sorry folks.
And of course, I have the awesome Planet Box lunch box rocking the food again! And before I share my guac that’s going to keep that tummy of yours healthy, let’s talk really quickly about WHY in the world gut health is so important. Check out this STUDY about what happens to mice when they are without gut microflora. They get infections more easily, and they have a hard time maintaining their health. Paleo Leap does a fantastic job of explaining why gut flora is SO, SO, SO important for our health. It affects our respiratory system, our ability to maintain immunity and fight off infections, it can contribute to mental health, and it’s estimated that nearly 80% (or more!) of your immunity is dependent on the health of that tummy of yours. So I’d say it’s pretty darn important to eat good food. Wouldn’t you? Enjoy this delicious and yummy recipe!
