S’mores: Crunchy graham crackers, gooey marshmallows and melted chocolate. Who doesn’t love s’mores?! And it’s just as good as s’mores bark.

True to form for this mama, I was creating 4th of July goodies on the 4th.  It doesn’t matter how much I try to work ahead, the creative juices don’t start flowing until I’m in the moment of whatever is happening!  Christmas, Thanksgiving, Easter, Memorial Day…you name it.  It’s not until I’m sitting in the home with all the right smells and sights that my brain gets into gear!

Well this year, ON THE FOURTH OF JULY, we were driving to berry picking.  On our trip, my daughter said she’d been making a list of different kinds of chocolate barks for each season and holiday.  I absolutely loved the idea.  So as she was talking, we both looked at each other and said at the same time, “S’MORES BARK!”  

We already had all the ingredients for these s’mores bark, so we immediately went to work after berry picking to have them ready for our evening BBQ with the fireworks and berries and whipped cream.

There is something about the taste of s’mores that brings out all the good feelings.  It’s summer and friends and warm nights and the luxury of a treat all wrapped into one!  

So today I’m going to give you two recipes.  One is completely sugar free, dairy free, grain free, and gluten free, while the other contains a little sugar due to the already made graham crackers and marshmallows.  This is a super fun treat for kids, and the making process is pretty simple and a blast to do in the kitchen together.  You’ll want to do lots of licking off of the marshmallow fluff and melted chocolate.  That’s an absolute must!  

This first recipe is totally homemade in every bite, so you’ll probably want to make the marshmallows and graham crackers ahead of time.  And keep your kids around for the marshmallows so they can watch them turn into a huge pile of fluff!  

 

S’MORES BARK

Recipe #1 – completely grain free, gluten free, sugar free, and dairy free

Ingredients

(ingredients for additional recipes are honey, maple syrup, grass fed gelatin, vanilla, almond flour, tapioca flour, coconut sugar, cinnamon, coconut and one egg)

Directions
  1. Be sure the graham crackers and marshmallows are ready and cooled!  
  2. Cut the marshmallow into desired chunks to place onto the bark.
  3. Next, place parchment paper over a flat baking sheet that will fit in your freezer.
  4. Gently cut up the graham crackers into chunks instead of making them into ground flour!
  5. Turn your stove on low and add the coconut oil and all the chocolate bars in small chunks.

6. Melt all the chocolate and coconut oil until smooth.
7. Pour the chocolate mixture onto the parchment paper and spread to your desired thickness.
8. Be sure to add the marshmallow chunks and graham cracker pieces right away.
9. Finally, place the bark in the freezer gently and let it set for at least 30 minutes.

You can take it out and eat immediately or break into pieces and put it in a tupperware; It stores very well!

 

Recipe #2 – contains some sugar and grains

Ingredients 
  • 3 bars stevia sweetened Lily’s Dark Chocolate 
  • 1 teaspoon coconut oil
  • Gluten free graham crackers (Pamela’s is a good brand we like), 1 box
  • Mini marshmallows (Dandies has been the best store bought I can find), 1 bag
Directions
  1. Cut the marshmallow into desired chunks to place onto the bark.
  2. Next, place parchment paper over a flat baking sheet that will fit in your freezer.
  3. Gently cut up the graham crackers into chunks instead of making them into ground flour!
  4. Turn your stove on low and add the coconut oil and all the chocolate bars in small chunks.
  5. Melt all the chocolate and coconut oil until smooth.
  6. Pour the chocolate mixture onto the parchment paper and spread to your desired thickness.
  7. Add the marshmallow chunks and graham cracker pieces right away.
  8. Finally, place the bark in the freezer gently and let it set for at least 30 minutes.
