Ok mama, I need to know if I’m alone on this.  I truly, truly feel like I might, possibly, very truly die without my Mexican food.  I’ve visited Mexico a lot, lived in Costa Rica and hey, I live in California with access to some of the best Mexican food on the planet without actually heading across the border.  This Taco Salad Dressing is going to have you eating even MORE of this than you thought you could!   I just can’t imagine my life without chips, guacamole, a good salsa, and the amazing perfect salty flavor that it all brings together.  I know you were hoping I’d share my even deeper reasoning for my love of Mexican foods so here I go.    When I was diagnosed with Lyme disease, there were so many layers of difficulty.  The medications, the diet limitations, the immune issues, the exhaustion, and about a zillion other things. 

But this kind of food was my saving grace. I couldn’t eat Italian, American, Thai, Chinese, or Indian.  I was limited to so little but oh, I could still have my chips, salsa and guac. Tacos were still something I could love and even EAT OUT.  That was a big woah back then!      It was the one things I could have that truly felt like “living” and boy, I was SERIOUS about my tacos and chips!   

I know, I know.  Kinda intense for a salad dressing but hey, food is powerful and we have reasons for what we love! 

So my friend, if you are passionate about a kind of food and it’s something special in your house, it’s A-OK in my book!  Figure out how to make it work!   Enough about my love affair with chips and tacos. Let’s move on.  One of the things I love about taco salad is that it’s super versatile, and as a busy mom, I need flexibility and that easy button.  

Taco salad (and really all things with taco in the title) are a favorite around here and you just can’t go wrong with it!

Throw together some high quality ground beef, veggies, red onion, and of course, chips, and you’re good to go.  BUT the dressing makes ALL THE DIFFERENCE.   My friends are often amazed when I bring a salad or a dressing to their home how few ingredients it has. AND THAT THEIR KIDS WILL EAT IT! Here’s the key, pick the right ingredients, and dressings can make salads one of the most delicious dishes in your home. 

My balsamic vinaigrette is a fan favorite and adding essential oils can take things up a notch for sure.  We mix up our taco salad a bunch but we love ground beef or chicken, veggies, corn and beans when the tummies are doing well, a good fermented salsa, and of course, Siete chips!   If you want to know why I love, love, love essential oils and hear more about how and what I use, go ahead and visit this page

Ingredients
  • 1 cup olive oil
  • 5 drops Cumin Vitality
  • 5 drops Lime Vitality
  • 2 garlic cloves
  • 1/2 cup white balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 cup balsamic vinegar
  • Directions
  • Chop or mince garlic finely and mix all ingredients together in a glass container or jar.
  • Shake well before use!
